Whole Wheat Bread (original recipe from Dottie's Kitchen)

8 c. whole wheat flour
1/3 c. soy protein powder
2/3 c. gluten flour*       Put ingredients in Bosch mixing bowl, mix for 1 minute
3 TBLSP. yeast*       Cover and let it sponge (rise) for about 20 minutes
5 1/2 c. warm water
2 TBLSP. dough enhancer*

Add:
1/2 c. oil
1/2 - 1 c. honey (I like 1 c. -- but recipe only calls for 1/2 c.)
1 TBLSP + 1 tsp. salt
4 - 5 c. whole wheat flour (add enough to keep dough from sticking to sides of bowl but not too much to make it heavy)


Put dough into 4 balls. Knead on floured countertop and shape into loaves. Put in greased pans.
Let rise until double in size.

Bake 350 degrees for about 30 - 35 minutes, or until light bown (baking time depends on oven temperatures).
